- 1 can of Garbanzo beans (Chick Peas) or Cannellini beans
- 1/2 lb. chopped shrimp
- chopped half an onion
- 2 chopped cucumbers
- 2 chopped tomatoes
- 2 chopped avocado’s
- Handful or two of chopped steamed, but firm, green beans
- 2-3 slices of chopped cooked bacon
- Handful chopped parsley or cilantro
- juice of lemon
- Apple Cider Vinegar
- Extra virgin Olive Oil
Combine all ingredients together and toss. Then add the juice from the lemon, Apple Cider Vinegar and Olive Oil to taste for a dressing with some salt and pepper (or use a dressing of your choice)
I always love Hidden Valley’s packet of Zesty Italian Dressing that you make in the shaker. It’s my favorite!
*If you wanted to add some more greens, I would use chopped Romaine Hearts.
