INGREDIENTS:

  • 1 can of Garbanzo beans (Chick Peas) or Cannellini beans
  • 1/2 lb. chopped shrimp
  • chopped half an onion
  • 2 chopped cucumbers
  • 2 chopped tomatoes
  • 2 chopped avocado’s
  • Handful or two of chopped steamed, but firm, green beans
  • 2-3 slices of chopped cooked bacon
  • Handful chopped parsley or cilantro

DRESSING:

  • salt
  • pepper
  • juice of lemon
  • Apple Cider Vinegar
  • Extra virgin Olive Oil

Combine all ingredients together and toss. Then add the juice from the lemon, Apple Cider Vinegar and Olive Oil to taste for a dressing with some salt and pepper (or use a dressing of your choice)
I always love Hidden Valley’s packet of Zesty Italian Dressing that you make in the shaker. It’s my favorite!

*If you wanted to add some more greens, I would use chopped Romaine Hearts.
